Easy Seared Scallops with Creamy Broccoli Mash

Take a break from mashed cauliflower and blend up this creamy broccoli mash topped with seared scallops!

This super simple recipe is a delicious low-carb meal you can prepare with a handful of fresh ingredients. Seasoned with zesty lemon and garlic, it’s the perfect way to add more fiber and protein to your diet. Plus, it’s a quick-fix dinner you can have ready in less than an hour!

To get started, combine the broccoli florets, minced garlic, diced onion, and water in a large skillet over medium heat. Mix the vegetables with a wooden spoon every few minutes until the florets become tender.

Next, prepare the broccoli mash by transferring the cooked veggies into a blender and pulse on high for three minutes. Add in the salt and pepper to taste, then set the broccoli mash aside.

In the same skillet, grease the pan with a bit of olive oil and sear the scallops in a single layer for three minutes on each side. When the scallops begin to turn golden brown, remove them from the pan and set aside.

Divide the broccoli mash between two plates and top with the seared scallops. Garnish with a sprinkle of salt, pepper, and a few fresh lemon wedges on top. Serve immediately and enjoy!

Tip: If you like a hint of heat, you can add half a teaspoon of chili flakes to the broccoli mash (or more if you like it really hot).
